That’s right Robin, Guacamole is awesome.
It really is, so I try to find excuses to put it on what ever I can! I make some pretty great Guacamole if I do say so myself, I have had people that “don’t like guacamole” convert after they tried mine!! Besides the standard nachos, I love Guacamole on my burgers! So today we are gonna make the Holy Guacamole And Bacon Burger!
I really don’t like ground beef much, but once the weather turns warmer how can one resist a burger and a bottle of my home brewed Amarillo IPA? Well I can’t so it’s burger time.
Gotta get your hands dirty when mixing up beef. Be sure to wash your hands, as I think I forgot this time… I was making these into baseball sized, balls… And I was aiming for a dozen but I hit 14, we feed a lot of people normally…
I like to leave them in the fridge for 30 mins, I think it lets them get a bit stickier, nothing worse than a burger that falls apart. When I worked in a restaurant I would have to do a stick test. You make a ball and grab an end and see if you can easily shake off a piece, if not, you were good! If so add some more bread crumbs, and maybe another egg.
Heat up the BBQ on High, then turn it right down to low to grill burgers, high heat is going to char the outside and leave the middle raw, thats how you cook a steak actually. HUGE TIP: Flip these only ONE TIME! AND DO NOT PAT THEM DOWN! It drives me mental when I watch someone flipping them 10 times and squishing all the juice right out the burgers! Flip once, no pat.
While the burgers are grilling, be sure to saute up onions and mushrooms, cause they are awesome and you need them in your life. And the glorious guacamole!
- 2KG Lean ground beef
- 2 eggs
- ¼ cup bread crumbs
- 2 dashes of cayenne (More if you want them spicier)
- 1 TBSP seasoning salt
- 1 TBSP garlic powder
- 2 TBS Italian seasoning
- couple pinches kosher salt
- 3 TBSP BBQ sauce (I use Sweet Baby Ray's)
- ½ pound of bacon
- 1 cup chopped onion
- 1 cup chopped mushroom
- 3 ripe avocados
- 1 tsp Garlic powder
- 1 tsp seasoning salt
- 3 dashes chilli powder
- 3 dashes cayenne
- 3 TBSP sour cream or greek yoghurt
- Juice from 1 whole lime!
- Add ingredients, mix together with hands thoroughly.
- Form Baseball sized balls, pat down to fit your bun (Count for shrinkage...)
- lay on cookie sheet, separate with parchment paper
- refrigerate for 30+mins
- Grill on low heat, flip only ONE TIME!
- DO NOT PAT THEM DOWN!
- Saute onions and mushrooms in pan with TBSP of butter
- add ingredients
- mix together with a fork or hand mixer
- refrigerate for 30+ mins
We also made some Yukon Gold fries baked in the oven, along with a ceasar salad, because that is a superior salad to all other salads.
I love guacamole as I have mentioned, I also add salsa to this bad boy as well! Wash that down with my ale, and that is a meal you would pay $20 for easy! Very soon I will be posting my home brew beer recipes! I look forward to sharing those with you !
